Old Mauritian
Ingredients
1 1/2 oz VSOP Rum
1 oz simple syrup
3/4 oz lime juice
2 dashes Angostura bitters
2 oz Champagne
1 mint sprig garnish
Method
Muddle some mint leaves with the syrup and lime, add the rum, bitters & ice. Shake. Strain into a coupe and top with Champagne. Garnish with mint sprig.
